Rull coka

The dough consists of egg, shortening, milk, and enough flour to make a dough. It is cut into small rectangles that are deep fried until crispy. The recipe was handed down to me from my paternal grandmother. Rull coka served with watermelon was a summer tradition with her family.

The recipe was part of a collection from my grandmother's traditional Mennonite recipes. My (her) ancestors had lived in the Netherlands, eastern Prussia, Russia (now the Ukraine), and finally Minnesota and the Dakotas. I suspect that this recipe stems from the time in the Ukraine.
